You can also try using chickpeas, which is a favorite bean of mine. Make this dish with whole-wheat couscous instead of the couscous and toss it with lemon juice, crushed garlic, olive oil, and salt and pepper. Serve over a bed of greens and serve the couscous on the side for a healthy meal.
