Do you need vegan quick meals replacement for the family? I know I do. There is some food that I like to eat that my family does not eat on a regular basis, so this was the perfect way to turn that into a quick and delicious dinner.

It takes under a minute to make and you can use it in place of scrambled eggs, or even on toast.
You can also make veggie burgers. If you like you can make your own patty by making a recipe with ground tofu and adding spices to it. If you would like you can add guacamole to the patty or even put your favorite kind of cheese on it.
Another great meal that my kids love is a red pepper hummus and chickpea blend. This is a healthy and delicious meal. I make it a couple of times a week, and my kids enjoy it as well.
If you love beans, you can make hummus with baked black beans. Take a tablespoon of peanut butter and a tablespoon of vegan mayo and mix them together. You will need to put it in a blender and blend it up to make a smooth hummus. If you would like to add carrots or celery to it, then just add them to the blender before blending. Add a little more water or liquid if you like the texture to be a little more chunky.
You can also try using chickpeas, which is a favorite bean of mine. Make this dish with whole-wheat couscous instead of the couscous and toss it with lemon juice, crushed garlic, olive oil, and salt and pepper. Serve over a bed of greens and serve the couscous on the side for a healthy meal.
A few vegan quick meals are pinto beans and chickpeas. In this recipe you add corn, onion, water chestnuts, and a little mustard seed. All you do is drain the beans and boil the chickpeas until they are tender. Take the mixture out of the water and mix it together.
Other vegan quick meals and yummy healthy meals include black beans, white beans, spinach, and even lentils. There are a lot of combinations that you can try when cooking with these foods. For example, you can add a little tomato sauce and cheese to this dish, and just a touch of salsa to the mix. The choice is completely yours.
