Not all kids are into eating veggies, what they want are fried chickens, sausages and chips. Of course, parents will not tolerate such poor nutritional food intake that is why they keep on experimenting dishes that will include a good amount of greens and alike. While at school, parents cannot track what their kids eats and the least they can do is to prepare them meals or snacks for them to bring at school. Vegan Lunch Box Idea: Tofu “Egg” Salad Sandwich

Ingredients:

                For the Tofu “Egg” Salad:

  • 14oz firm tofu
  • ½ to ¾ tsp turmeric
  • 1.5 tbsp nutritional yeast
  • ¼ to ½ tsp black salt
  • ¼ tsp hot chilli powder
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp lemon juice
  • 1 tbsp scallions
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 1 tbsp vegan mayo
  • 2 tbsp chopped celery

For the Sandwich:

  • Wheat bread slices
  • Greens
  • Vegan mayo

How to Make:

  1. Remove excess water from tofu by pressing it between your hands; crumble it using your hands.
  • In a bowl, add all salad ingredients and mix well. Season base on your preference. Put it in the refrigerator to chill.
  • Toast the bread slices and layer it with vegan mayo on one side and put in the greens as well. Put a good amount of tofu “egg” salad on top of the greens and add some salt and pepper. Wrap it inside a sandwich bag and put it inside the lunchbox.

Vegan Lunch Box Idea: Samosa Wraps

Ingredients:

                For the Spiced Chickpeas:

  • 15oz drained chickpeas
  • 1 tsp oil
  • ½ tsp ground cumin
  • ¼ tsp ground cinnamon
  • 1/3 tsp salt

For the Samosa Potatoes:

  • 3 boiled medium sized potatoes and mashed coarsely
  • 1 tsp oil
  • ¼ tsp coriander seeds
  • ¼ tsp cumin seeds
  • ½ tsp mild green chilli pepper
  • 1 tsp ground turmeric
  • ½ tsp ground cumin
  • 1 tsp ground coriander
  • 1/3 tsp cayenne
  • ½ tsp garlic powder
  • ½ to ¾ tsp salt
  • ¼ cup peas
  • ½ tsp dry mango powder
  • 2 tsp minced ginger
  • 2 tbsp cilantro mint chutney
  • ½ tsp lemon juice

For the Wrap:

  • 4 large vegan wraps
  • Chopped tomatoes
  • Chopped onion
  • Cilantro mint chutney
  • Greens

How to Make:

  1. In making the samosa mixture, heat oil in a pan over medium heat. Put in coriander and cumin seeds until they change colors. Add chilli pepper and cook for another minute. Then add all the remaining spices.
  • Add the mashed potato and salt into the pan and mix. Cover the pan and cook for about 2 minutes.
  • Add peas, chutney and ginger into the potato and mix well. Then add mango powder and mix again. Add lemon juice if you wish to omit the spice. Season with salt. Cover the pain again and cook for another 2 minutes. Let it sit for 2 minutes more to fully develop its flavors.
  • In making the spiced chickpeas, heat oil in a pan and add the chickpeas, spices, and salt. Mix and cover for about 2 minutes. Add some water and mix again. Cover pan for about 2 to 3 minutes and season to taste.
  • Assemble the wrap by layering the greens into it. Add some potato samosa and spiced chickpeas. Put in some chopped tomatoes and onions and drizzle some chutney. Wrap it up by folding in the left and right sides then folding the edge closest to the filling. Tuck in and continue to roll. Wrap it in a foil and put it in the lunch box.
