Baking has not been a skill for everybody. Most of us mess up in the kitchen whenever we attempt to bake our own goodies. But as we limit our diet into something that has less access to available food sources, we need to adapt and learn new skills. As for vegans, vegan cookies cannot be easily found unless specialty stores are easily accessible. Because of this, we would like to introduce some of our vegan cookie recipes for you to try!

It is important to learn some new goodies to prepare to keep our diet interesting and enjoyable. Since not all are skilled bakers, we will be sharing some very easy vegan cookie recipes for beginners and alike. These vegan cookie recipes have fewer ingredients making it less intimidating too.

Vegan Cookie Recipe: Pumpkin Oats

Ingredients:

Pumpkin for your vegan cookie recipes
  • 1 cup organic pure pumpkin puree
  • 2 ½ cups oats
  • 2 packets stevia

Optional ingredients:

  • ½ tsp cinnamon
  • A half tsp of pumpkin pie spice
  • ½ tsp vanilla extract
  • ½ cup chocolate chips or nuts

How to Make:

  1. Preheat your oven to 350F
  • In a mixing bowl, combine all ingredients to make the dough. Include all optional ingredients as desired.
  • Using your hands, make 10 cookie shapes of your dough
  • Line baking sheet with parchment paper or non-stick cooking spray. Place dough and bake for 10 minutes

Vegan Cookie Recipe: Coconut Cookies

Coconut for your vegan cookie recipes

Ingredients:

  • 1/3 cup + 2 tbsp oats
  • 1 cup shredded coconut
  • 2 ripe bananas

How to Make:

  1. Preheat your oven to 350F
  • Blend shredded coconut and oats in a food processor until they appear like panko crumbs
  • Add the peeled ripe bananas and blend until the texture becomes a paste
  • Line your baking sheet with parchment paper or non-stick cooking spray; form cookies using two spoons
  • Put in the oven and bake for about 20 minutes; let it cool on a cooling rack afterward.

Vegan Cookie Recipe: No-Bake Oatmeal Cookie

Ingredient:

Oats for your vegan cookie recipes
  • 1 ½ cups gluten free rolled oats
  • ½ cup brown rice syrup
  • ½ cup smooth almond butter
  • Chocolate chips or fruits

How to Make:

  1. Line a big plate with parchment paper and put aside
  • Put rolled oats in a mixing bowl and set aside
  • Melt almond butter with brown rice syrup using a microwave-safe bowl and mix
  • Pour the melted mixture into the oats and mix well
  • Form mixture into small balls and place on the prepared plate. Form it into a cookie shape by pressing each ball; add fruits or chocolates as desired and refrigerate to about 30 minutes
