A great recipe for high protein, low carb vegan foods has been around for a long time. Most of us have had the pleasure of trying this kind of recipe at some point in our lives. My first was from a friend who explained that the mixture needed a little salt to bring out its flavor. It was delicious!

Another version that I enjoyed was a baked potato with salsa and bean salsa. With all the ingredients mixed together it gave me the feeling of being on a really good diet with lots of protein and carbohydrates. For dessert, a fruit salad is always a crowd pleaser. It can be dressed up with some fresh or frozen fruit, yogurt, or even ice cream. It is easy to make and delicious too. Other great ideas for fruit salads are coconut cream, pears, peaches, or bananas. They all have lots of protein but are also very low in carbohydrates.

You can of course also make a protein snack out of trail mix. You just mix it up with nuts, salt, or sugar. This is also a great way to get some protein into your low carbohydrate diet.

For breakfast, oatmeal is always a good choice. My kids absolutely love it. For an extra sweet treat, try peanut butter on crackers or toast. If you add some maple syrup, you have an instant sweet that the whole family will love. There are also many other cereals that are very low in carbohydrates and very high in protein. Just look for those that are made with high-fiber ingredients.

Another great option is soy protein. It is high in protein but also contains absolutely no fat, cholesterol or carbohydrates. If you enjoy tofu, consider purchasing a soy alternative as well.

The other night, I had leftover spicy cashews on hand. So, when I went to make a dinner of blended tomatoes and broccoli leaves, I didn’t forget about the beans. I also loaded up on high quality lentils, black beans, and a can of coconut milk. I was able to eat all of these foods without gaining the last bit of protein I needed for my muscle building. It was so delicious, I didn’t even care that I was packing on the pounds!

In addition to protein, a great protein source for vegetarians is beans. They are high in both protein and fiber. If you can find good quality beans, they will go great with your low carb vegan meals. To make them even tastier, you can add some spices to them. This way you can experiment with different kinds of spices to spice them up.
